Empty PST file

Is there any reason I couldn't copy an empty PST file to a backup then
copy that backup over the PST file for a quick erase of all emails as
necessary?

I have a user who doesn't delete emails from his Inbox or Sent Items.
Instead he moves them to a Personal Folder (PST file) for a history of
everything he's sent or received. Then periodically he copies the PST
file to a CD and erases everything in the personal folder. This can
take a while. If he had a good copy of the empty file why couldn't he
delete archive.pst and copy empty.pst to archive.pst to start fresh?

The proper way of doing this is;
-backup the pst-file
-verify the backup
-create a new pst-file (File-> New-> Outlook Data File...)
-if prefered set it as the default delivery location (Tools-> E-mail
Accounts-> Next)
-disconnect the original pst-file

Copying over existing pst-files could end up corrupting your mail profile.

Yes. It will corrupt the mail profile.
