Entering Tasks occuring in the past

Some of our users need to enter tasks that might have happened, say last
week. When they do this the system defaults to today's date, which makes the
task and time capture inaccurate. The users are going to View my Tasks, New,
Task and entering task with start and end date of last week. The system sows
it as start and end today. How can we work this so the correct date is
actually captured?
