How can I install Evaluation version of Project server 2007 and MOSS 2007 1n
the same machine for 1-tier farm installation.

Hi, you should read the deployment guides at
http://technet.microsoft.com/en-us/library/cc197758.aspx - deploying trial
software is no different than fully licenced software.
