Excel and Word 2007

I dont wish to use Excel and Word 2007. Although, it would only be a matter
of getting use to it, not any of the people I send files to have 2007 and
thus would not be able to view the files. However, I do like Outlook 2007.
Is it possible to remove all applications except for Outlook 2007 or is it
possible to uninstall the whole program and re-install my 2000 version and
then just install Outlook 2007.

If you own a retail version of Office 2000 you can do that. When you go to
install Outlook 2007, read everything carefully. You must make sure that you
are installing only Outlook and not upgrading everything else. (Ideally you
install oldest software first, then in order of release.)

Yes. You can specify which applications are installed during setup.

However, file sharing may not be as bad as you think. You can save your Word
and Excel files back to previous versions, and some versions of Office have
an update available that allow them to read and edit Office 2007 files.

If you haven't already purchased, it, you could just buy Outlook 2007.

Install Office 2000 first, and then Outlook 2007.
