Is it possible to turn off the automatic hyperlinking in excel 2000 so that
when I type an e-mail address it will not hyperlink it?

Yes, you can...
go to Tools->AutoCorrect Options, choose 'Autoformat as you type' tab and
clear the checkbox 'Internet and network paths with hyperlinks'
