Not using exchange, running Outlook 2000 on one and
Outlook 2002 on the other.

And you are transfering from Outlook 2000 to Outlook 2002? Then copy the
pst-file to the other machine and connect to it by using File-> Open->
Outlook Data File...
When searching for pst-files make sure you include hidden and system
files/folders
