Can a field name be renamed in Project Professional/Project server?

Actually, the question should be - if I add Text1 to Tasks in Project
Professional, will this data apss through to Project Server Database on
update? I added the Text1 field on the time sheet, but the data is empty in
Text1 field.

If you want the custom field name to appear in Project Web Access, you
should use an Enterprise field. Local field customizations are local to the
project they're created in. You can, however, add a standard text field to
the timesheet, however it will not carry a custom name into Project Web
Access. Adding a field (standard or enterprise) to the time sheet requires
several steps.

1) Customize the field
2) In your project, go to Tools > Customize > Published fields and add the
field to your project
3) Logon to Project Web Access and customize the timesheet view to include
the new custom field
4) Republish your project to push the information to PWA
