No, Visio doesn't have the field-graying feature, like Word. But if you get
into text-edit mode for a shape (say, by double-clicking a shape, or
selecting a shape and pressing F2), you can detect a field by moving the
cursor with the arrow keys. If there's an inserted-field, the cursor will
jump over the entire word, instead of each character.
