For a reason unknown fields and Visio diagrams in my Word documents have
started to appear highlighted in grey, I can't find a way to switch off
this highlighting, any suggestions?

Tools -> Options, View tab, "Field Shading" dropdown: does it say
"Always"? If so, set it to "When selected" (or "Never", if you really
hate grey shading) instead.

For form fields, there's a separate 'Form Field Shading' button on the
'Forms' toolbar.

(I only have Word 2000. Adjust instructions as needed for Word 2002.)

I'm not sure why your Visio diagrams are being highlighted. Hopefully,
turning off shading for fields will turn it off for diagrams as well.
(Does the shading show up when you print? Field shading, in general,
shouldn't. So if your printouts have the grey highlights as well, it
might be some directly-applied formatting--check Format -> Borders and
Shading -> Shading tab.)
