Currently running 10.5 on a MacBook Pro and will be upgrading to Snow
Leopard.
I have been reading about the font conflicts that happen because of
the new fonts. First, should I try to take care of the issues before
upgrading? If so, what steps should I take? If this can not be taken
care of before hand, what steps do I need to follow after upgrading to
make sure that there will be no problems with office? Many have
mentioned that the fonts cache needs to be cleared? How is this done?

You can't. The new fonts aren't installed yet.

In Disk Utility, run Repair Permissions.
