I don't think I've ever noticed an option to hide a series. (I would be very
interested in the specifics of where that's found, though!) I suppose if you
selected the radio buttons for "none" in both the fill and the area, you
would do basically the same thing, though.
If that's what you've done, then the data series will still be listed in the
chart objects dropdown box on your toolbars -- you'll see that dropdown box
with the words "value axis" or "category axis" if you select one of your
axes on the chart. Your data series are all listed there.
With that said, also note that you can hide data on the datasheet
(View/Datasheet) by double-clicking the row or column headers (A/B/C or
1/2/3). This will make the data on the sheet show up in a grey font. It will
also make the data series *not* show up in the chart objects dropdown box on
the toolbar. To make these data visible again, simply double-click the row
or column headers on the datasheet.
