Formatting Palette is driving me nuts

Version: 2004
Operating System: Mac OS X 10.5 (Leopard)

In different documents, I would like to edit the formatting palette so only some styles are visible, not the entire list of everything ever created. I can't seem to ask the right question of the Help button. I'm sure someone knows the question. Help!

Just below the Styles list, there is a dropdown button to toggle the display
between "All Styles" and "Available Styles". Does that make any difference?
