getting outgoing e-mail to default to normal appearance

When I start a new e-mail message, it always is defaulted to the web layout
view. I want it to default to the normal appearance. Also, my autosignature
defaults to double space. Each time, I have to go into
format/paragraph/spacing to manually change to 0 pt. before and after. Any
hints?
