Global: Project Workspace Customization

I want to modify/customize the Project WorkSpace Site Content on a global
level. For example add or rename fields or columns for Issues that are the
default view for every project workspace.

I've made changes, but I do not see those changes replicated into exisitng
Project Workspace web sites. Why?

Once you change the master template, all new sites will take on the new
configuration. Previously created sites must be changed one at a time.

A little time has passed, but I've been able to try out your instructions and
run into the following error during the Export section after step #3. Here's
the error "The specified gallery is not available for this Web site
collection." I'm logged in as the Administrator, so is there some options
that still need to be enable?

Without seeing what you're doing, it's difficult to say.
