Gridlines and Headings Reappear

Version: 2008 Operating System: Mac OS X 10.5 (Leopard) Processor: Intel I have a work book that I have turned off the Headings and Gridlines in all sheets in the work book. I turn them off in the Formatting Palette under Page Set/Sheet/Gridlines View (unchecked) Headings (unchecked). All my pages are protected with most sheet having every cell locked. After a period of time I reopen the workbook and the heading and gridlines are back on. The sheets are still protected.

I need them to stay off all the time. What is going on???
