Format the cells that you are using specifically to a date format. Format
Cells -> Category Date ... and choose one.

How are you entering the date into the cell?

Exactly, (by that I mean every single keystroke) how are you entering your
date?

If you are preceding the date with an "=", that is expected behavior. Don't
use the "=" sign.

If you are not preceding the date with an "=", then check
Tools/Options/Transition and ensure that the Sheet options are DEselected.
