How do I undim the Header in my Microsoft Word document? I want the Header to
look the same as the rest of the page.

The header (and footer) will always be dimmed when the cursor is in the
body, and vice versa. The only place where you'll see the whole page on the
screen at the same contrast is in Print Preview. There is no workaround for
this.
