Can I change it for a new template has a specific header? I would like a MLA
heading that would be used on every page.

What version of Outlook are you using? How about CTRL + F1 to turn on the
Task Pane, click at the top to change to the Templates task pane. Create a
new template with your MLA heading and then set that as the Default Template
(at the bottom).
