This is an issue with the utility. The only solution I know of, other
than manually checking for hidden data, is to obtain a real metadata
cleaner.
Unfortunately the MS utility wasn't tested enough prior to releasing
it to the public. There are a handful of issues I've encountered and
not enough memory, application hang, a little too aggressive, are just
a few.
Other than examining the fields in the document, (which you can do by
pressing Alt + F9 and reviewing them), checking for same color fonts,
verifies there are no Tracked Changes (use the Reviewing Toolbar and
Accept all changes), and a few other minor checks, it mainly it
creates a new document, turns on a few options under
Tools/Options/Security: "Remove personal information from file
properties on Save" and "Read-only recommended". Then it copy/pastes
(inserts) the old document into the new one.
You can also open the document using "Recover text from any file"
format and examine it for missed metadata if you are really concerned.
The above is basically my own method for metadata removal and to be
honest, I trust it more than Microsoft's utility. ;-)
