Hiding details of an appointment

When co-workers plan a meeting and are looking at free/busy times, they can
see the details of the appointment if they hover the mouse pointer over the
appointment. Is there a way to block that?

You'll have to mark those items as Private then.
If you are using Outlook 2007, then you can also modify the permissions on
your Calendar and set permissions for Default to "Free/Busy time".
