How can I categorize Outlook e-mail messages using "user-defined".

I am attempting to organize / manage e-mails that contain issues pending
resolution. I would like to set up several user-defined, easily-edited text
fields such as: Follow-up Date, Responsible Party, Topic.

I know how to create the user-defined field but I don't know how to enter
text data into the field for each e-mail.

Help!
