How can I change my OneNote email settings?

I goofed up when I set up my OneNote email settings...now OneNote tries to
send out emails on a server/system that doesn't exist. How can I go back in
and change those settings? I've tried going through every Tools or Help
setting I can find and I've seen nothing that applies...

I suspect you need to go to your default email client and either nuke out
the Exchange Server profile and setup a new default pop client or add a
secondary email profile and choose it as the default.

Either way, your default email client and settings are, I suspect, where
OneNote takes your account settings from.
