How can I change the display name for people in my inbox in outloo

I'd like to change the display name of people in my inbox. For example,
instead of it saying Sara Baker, I'd like it to show up as SBaker. Any ideas?

You are expecting Outlook to override the name the sender has chosen?
Not possible.
