How can i have some fields in a file editable and rest read-only?

I am using Microsoft word 2000. I have a table. I want the row and column
headings of the table read-only. We want to type some data in the cells and
take a print out. If i put in a password protection the whole document is
locked. I would like only sections to get locked.
If not word is there any other Microsoft product that i can use?
