how can I keep certain email but delete it from my server?

trying to learn

I have a ton of email that I want to keep but, my server keeps getting backed
up. I want to be able to access certain email but not have it on the ISP's
server. How can I do this?

Impossible to say without knowing your version of Outlook and type of mail
account.
