How can I lock styles so that they can't be changed (pre Word 2003

I designed a restaurant menu for a client. They've had it four months and now
all the styles I set are changed and text added in new styles.

I know you can lock these things to prevent editing using programming. Is
there a simple task / resource that shows me how?

Not sure what you have in mind here: there's no way to prevent editing
styles, even using programming.

You can set up the template using text form fields in table cells, and
then protect the document. See
http://word.mvps.org/faqs/tblsfldsfms/LinesInForms.htm, especially the
links to articles (by Dian Chapman) about creating protected forms.

But note that there is no solution which gives you complete control
over what users can do with a document. In the long run, it's a matter
of teaching clients/users to create documents from templates, applying
styles as needed.

You can get pretty far by using simple techniques. For example, a
MacroButton field can be used for "Click here" prompts in the
template.

You can also set up your template so it has a custom list of styles instead
of the styles drop-down in the formatting toolbar.
