How can I set up a directory from a list of cateogories?

I'm trying to set up a directory of members from a list of options they can
choose. Can I set it up from Access or Excel? Help!

Yes, you can, but you will have to provide more information. What are your
requirements? One short sentence doesn't define an application. You need to
figure out what kind of data you want to store, what the data store is used
for, what this "list of options" is, who should have what kind of access to
what data, etc., before you can start talking about HOW to do it. The more
specifi your requirements are, the more specific the recommendations can be.
