How can Iverify that all my data is truly backed-up from Outlook?

I am attempting to backup all my data files in Personal Folders in a .PST
format.
When I try to open these backup files using Outlook nothing appears on the
screen.
I am really concerned about making sure all my data -- Contacts, Calendar,
email, etc. is really, truly backed up to my external drive and other sources.

Any suggestions?
