Print a blank Word document and then draw the circuits in the white space.

That is one way.

You could use the Drawing toolbar to create the various gates. I think
there is probably an application better suited for this than a word
processor.

You can find these special characters in the Insert | Symbol dialog. You
will probably need to look in a "large" Unicode font such as Arial Unicode
MS. Look in the Mathematical Operators or Miscellaneous Technical character
subset.
