How co I get a clean, white, exact copy from my Hp fax/printer?

I use a HP fax machine to copy documents. Since I purchased a new computer
(Dell Dimension 2400) two years ago (Microsoft Office governs the document
scanning and imaging) I have been unable to get a clean white (exact) copy.
All my scanned documents come out grey with poor quality print, even though I
have tried every possible way of sanning and printing. Prior to using
Microsoft Office as the scanning tool, my copies were crisp and white -one
could hardly determine the original from the copy. Please advise.
