How do get rid of the style defiinitions and font definition"jibb.

When I initiate a new email...the first part of the body of message includes
a lengthy and meaningless to the recipient list of style and font
definitions...how do I set my software to not include this stuff

Don't use Word and your mail editor and use Plain Text as the format.
