how do i add a custom address field in my contacts in outlook 07

i am exporting my contacts list to excel so that another staff member can
undertake a mail out, and have had some strange characters appear in the
resulting excel s/sheet. How do add a new address field so we can have the
address info appear on the s/sheet in a custom text field?
