How do I add/remove fields in the Contact "Select Name" box that

pops up when creating a new mail message. The Name, Display Name, E-Mail
Address, and E-Mail Type are the headers. I would like the Company Name
instead of the Display Name or E-Mail Type.

The Address Book view is not configurable.
You can add the Company Name to your File As fields if you want, then sort
the Address Book by the File As field.
