I don't want to keep all emails attached to a string of emails I want outlook
to only keep the latest email attached to a string of emails. Does anyone
know how to automatically/or by hand one at a time delete all previous emails
attached to responded emails?

You could display all emails (sent and received) in a single Search Folder
and then group that by conversation. Cleanup has to be done manually though.
Outlook 2010 will contain "Conversation Cleanup" features to automate this.

For details on how to do this in Outlook 2003 and Outlook 2007 see;

All those previous messages in the "string" are just data in the body of the
current lessage, included there because each person replying decided to leave
it there. If you don't want Outlook to include previous messages when you
reply, then disable that option. Tools>Options>E-mail options. Look in the
"On replies and forwards" section at the bottom. Change the drop-downs to not
include replies.

Incoming messages, though, are whet you get from others. If they included the
prior re[plies, there's nothing your Outlook can do about that. Ask them to
stop including replies.
