How do I change the "display as" of emails in address book

Tools->Options->Mail Setup->Email Accounts->Directories->View or
Change->Change. Set your display option there.

Otherwise, Tools->options->contacts - set your preferred display there as
well.

After furious head scratching, dlw1947 asked:

Just found this excellent answer. However, I'm at work and we're on server's
exchange -- I can't make the change per your suggestion. Is there any other
way to do it?
