How do I change the user name and email?

I am the new receptionist and need to change the old receptionists name on
the outlook account to mine along with the email address. How do I accomplish
this?

I'd suggest asking in a newsgroup related to Outlook.

This newsgroup is for questions about Access, the database product that's
part of Office Professional.

Talk to your Exchange Administrator; only she can do this.
