Do you have Office XP or 2003? You would need an OCR(Optical Character
Recognition) software to convert the "image" into text.

Actually if they have OCR they don't need Office XP or 2003. I did it when I
still had Works Suite 2000 (with Word).

Yep. Office XP and 2003 contain OCR software. Other option is another
program that provided is such as you used with 2000. ;-)

scanners had some sort of OCR.
