how do I copy someone on a meeting request?

If you want to copy someone on a meeting request - but they are NOT required
or optional to attend the meeting. Just as an FYI.
Can this be done?

Why can't there be cc and bcc fields, like with an email?

Because cc and Bcc already have special meanings in the context of a meeting
request -- optional and resource recipients.
