how do i copyright

I have produced a catalog with prices. How do I ensure that it cannot be
tampered with when I email it or send it on a CD

Not a Publisher issue

Start with sending it as a .pdf file but understand that even .pdf files can
be edited if the recipient really wants to. Copyrights will not stop them.

generally speaking an "original work" is copyrighted the moment you product
it...write a book, a poem, etc,...dunno about catalogs unless everything in
and about your catalog is actually yours to begin with. IOW if you made a
catalog of Harley Davidson motorcycle parts it may not be copyright-able by
you.

besides...copyright is largely bogus unless you have the funds to defend it
(be prepared to actually PROVE damages) - its not as easy as you may think.
