How do I create a bifold program for a conference?

Our organization is planning a conference and I would like to create a
program for it. At the moment, it looks like we will need at least 10 pages
for speaker bios, session details, etc. Could anyone advise me on how to
create a bifold program, using MS Office?

I'm biased but I would suggest using Publisher.
