How do I create a demand supply curve in word?

I am attempting to create demand and supply curves in word. Is there anyone
who has experience in doing this?

You could use a Chart object (Insert > Object > Create New > Microsoft Graph
Chart). Right-click the default chart and choose the XY (Scatter) type.

For more flexibility, make the chart in Excel, copy it, and paste it into the
Word document.
