How do I create a trifold card?

I wish to use a template that is of a trifold structure in order to produce a
membership card for my group. This will effectively have text/printing on
both sides, which will result in 6 pages.
Ultimately, I wish it to fold into the size of a credit card and would thus
look to format it to 3 per A4 sheet of paper.

What program are you using? Might divide your A4 sheet into thirds, perhaps
using tables. Create the brochure in the top three cells, copy to the other
table cells. Repeat for the back. Keep in mind, anything on the left on the
front will be on the right on the back.
Do you have Publisher?

I have searched what I could of Microsoft's bank of templates and didn't find
what I was looking for. I assumed I would be using Word, but to be honest
would use which ever program was easiest.

I want the back to simply have text, however the inside 3 pages would be
used to show a table/grid format on each page.

I had assumed to use Word, although it comes down to whichever program is
easiest.
Unfortunately, I don't have Publisher.

Easiest depends on the user. I'd be a lot slower if I used Word but that's
because I would use Publisher for a brochure like yours. Even tho Word
templates are never going to be exactly what you need, start with a tri-fold
brochure and use it as a basis. Take out that which you cannot alter to suit
your needs, tweak/relocate that wich you can, add whatever is missing.

You don't need Publisher to use Mary's instructions -- they apply to Word as
well. :)

Incidentally, the easiest method usually comes down to what someone knows.
If all you know is a single application then that's always the "easiest"
method. I worked for a company that had a Wang word processor and a Mac with
Excel. I didn't know how to use the Wang but I was great with Excel and felt
it could handle any task better, including writing letters. lol But that was
also over 20 years ago. ;-)
