How do I create an income/expense sheet?

I am trying to create a spread sheet that I can input income and expenses
that will calculate the subtotals and grand total. I also want the expenses
to show in red with parentheses.

Did you try create new from installed templates? Excel 2003 & 2007 came
with and income & expense template installed.
