I scanned 54 pages and then put them into a Word document. How do I edit
this document?

In between the "scanned" part and the "put them into a Word document"
part, you need to do an "OCR" part. (Optical Character Recognition) That
turns the "scanned image" into "editable text".

Which means scanning all 54 pages in again.

Depends on your OCR'er
PaperPort (for example) can import the scanned *jpg images, stack them into
a single file then OCR to Word.
Note: regardless of what OCR used, you'll want the original text/printouts
handy because there WILL be spelling errors, esp if the source has
jargon/etc wording.
