How do I have Outlook 2003 default to email address 1 only?

I have contact names that have more than one email address. How do I let the
only the first email address populate without me having to select it. The
former version of Outlook allowed for this option. Thank you.

Using what steps?
In all versions of Outlook, the Outlook Address Book is the interface that
lets you select which email address to use. That did not change in Outlook
2003.
