I cannot find an easy way to insert an item into a mail message - used to be

suggestions?

Are you saying you can find the Insert Item command?
Click the dropdown next to the Paper clip.
(Your Outlook version and mail editor were not posted, so you are making me
guess those.)

Insert Item isn't available if you use Word as your editor.
Try it with a new html-only email message.
Alternatively, I think you can drag and drop when using Word as your editor.

Please read my post. If you want help you must specify both your version and
your editor.
