How do I keep personal entries from being accessed by others when.

I use my Outlook both at work and at home. While at work my boss will sync
my Outlook (for the Calendar and Contracts entries) with his. I wanted to
know how I could keep my personal entries from not being synched/viewed onto
his Outlook.

More info needed. Are you on an Exchange server? How is your boss accessing
your data?

I'd keep personal data off the work computer entirely or use another mail
profile/PST file for it.
