How do I make my Replies (to Messages) use Word as E-Mail Editor/.

When I reply to a message the reply uses the sender's format e.g. HTML. I
wish my replies to use Word. I have set Word/RichText for my new messages
but it doesn't seem yo apply to Replies.

True statement.

Since Rich Text is an Outlook-specific format, if you wish to communicate
with people who don't use Outlook, you will avoid this format. Only other
Outlook users can read Rich Text.

That said, when replying, click Format and choose the format you want.
