how do I make the text in an image searchable in different languag

One Note only gives me the options of English Spanish and French, how do I
choose one of the other languages supported by the program for text in an
image? (In this case I need Hebrew).

Did you try:

1. select the note
2. Tools -> Set Language (right pane)
