How do I manipulate/sort data from a drop-down Excel list?

Someone used an MS Excel worksheet as the vehicle for a user survey, and used
drop-down boxes for respondents to select "Strongly agree", "disagree," etc.
How do I collect the data from these drop-down boxes once I receive these
files from survey respondents?
